Banana Cake

Looking for a quick snack to take on the go or simply a crowd pleaser for when your friends visit to prove that you can actually bake? However, as a first vegan recipe, problems that may arise may consist of whether or not the cake will rise or how can i substitute the eggs? Here is a simple, quick, gluten free (optional) and vegan recipe.



Wet Ingredients:

3 Bananas

Either chia seeds or flax eggs, however I used two thirds of a cup of coconut oil and a splash of almond milk

1 tsp Vanilla Essence

Two thirds of a cup of regular or brown sugar

Dry Ingredients:

Gluten free flour (optional, otherwise use all purpose flour)

4 tsp Baking Powder

1 tsp Baking Soda

Pinch of salt


Walnuts or vegan chocolate or both!



  1. Preheat the oven to 170 degrees c (350 degrees F)
  2. Begin to mash the bananas, and start to combine the sugar, coconut oil and vanilla essence.
  3. Add in your dry ingredients and place into the oven for 40-45 minutes.
