Hokey Pokey

Yes, originally named Hokey Pokey is a cornish term for Honeycomb. I try out Nigella’s simple recipe to achieve that brown crisp treat.

Ingredients:

1 cup of granulated sugar

3 large heaps of golden syrup

1 1/2 tsp bicarbonate soda

 

Method:

  1. I recommend mixing the sugar and syrup together first without any heat.
  2. Once mixed, add to the heat until it is bubbling. It should take around 3 minutes.
  3. Off the heat, combine the bicarbonate soda immediately and whisk until a light brown foam appears.
  4. Pour onto a tray to let it set.
